FRESH BEGINNINGS

Le Chateau's culinary team is led by our Executive Chef Tim Depelteau and Sous Chef Jonathan Longo. The two have worked together for many years, each driving the other to be better every day, and constantly pushing their culinary boundaries in search of excellence.

Executive Chef Tim Depelteau
Chef Depelteau joined Le Chateau after spending five years as the Executive Sous Chef at the Hyatt Regency Greenwich. There, he oversaw all aspects of the kitchen, including banquet facilities, restaurant, bar and room service, and seasonal menu creation. He received the Tower Award in 2014 for exceptional work, and was named Manager of the Year in 2015. Prior to the Hyatt, Chef Depelteau's experience includes positions at Blu in Hastings on Hudson, Sous Chef at Rulu's River Cafe in Stamford, and Executive Chef at Shelly's on the River at the Hampton Inn in Stamford. Tim holds a certification from the French Culinary Institute for Charcuterie and Pâtés. He loves to cook in the Farm to Table style using locally grown ingredients.

Sous Chef Jonathan Longo
Chef Longo also joins Le Chateau fresh from a stellar culinary career at the Hyatt Regency Greenwich, where he started as a line cook and was quickly promoted through the ranks of Cook 1, 2, 3, Culinary Supervisor, Sous Chef, ending with Chef de Cuisine. Chef Longo was responsible for executing and overseeing the culinary operations in every aspect. In all, Chef Longo devoted ten years to the Hyatt and achieved many awards during that time, including the Tower Award in 2011 for exceptional work, Employee of the Year in 2012, as well as Manager of the Quarter in 2015.
